Thai Inspired Peanut Chicken

I feel like I woke up last week and all of a sudden it was September. How did that happen? I usually see fall coming a mile away. Although summer is my favorite season, fall does come in second. I miss my bikini, but autumn brings something totally different to the table. I have always seen the beginning of September as the start of a new year, I think this is because I spent about 20 years in school. September for me means shopping and getting organized, it also means that things start to slow down a bit. Weekends are less packed with birthdays and social events, and its easier to plan healthy lunches and wholesome, homemade dinners. All of a sudden I have time to go to yoga fours days a week and take Kona for those super long walks that she loves so much. 

September also means the return of my all-time favorite kitchen appliance, my slow cooker. Sunday mornings mine gets plugged in an it slowly cooks delicious and healthy meals for the week. I know that going back to "reality" for those of you with kids can be very stressful, so hopefully a slow cooker recipe will help you out now that carpools and hockey practice are in full force. 

I realized this past week that I have been neglecting those of you who are meat eaters, I am hoping that this week's easy chicken recipe will make up for it. I have also made this with turkey, but have never tried it with anything else. You can make this with boneless breasts or thighs, but I like to use bone in meat for slow cooking. If there is skin on your chicken just leave it there for cooking, you can remove it while you are pulling the chicken. Aside from the color of bell pepper you chose to use there isn't much to talk about in terms of substitutions. You can leave out the chilies if you like milder foods, but that's about it. What we should chat about is how diverse this is in terms of how to serve it. My normally choice is to have this chicken with long grain white rice and a side of sauteed leafy greens. If you are forgoing carbs at the moment, this chicken also works great in lettuce wraps.

Thai Inspired Peanut Chicken

2 Lbs of Bone-In Chicken Legs 

2 Bell Peppers, Sliced into Strips 

1 Onion, Diced

0.5 Smooth Peanut Butter

1 TBSP Lemon Juice

0.5 Cup Water

0.25 Cup Soy Sauce

2 TBSP Honey

1 TSP Chili Flakes 

Add onions and peppers to the bottom of the slow cooker

Place chicken on top of the veggies

Wisk the remaining ingredients together and pour over the chicken

Cook on low in your slow cooker for 6 hours

When done, shred your chicken and discard any bones

Serve hot with rice, noodles or in a lettuce wrap
