Welcome to Nickels & Noodles! I am so happy that you decided to come by. My name is Alexandra and I hope that we can become better acquainted. I want to get off on the right foot, so I’ll start off by making a confession; I am obsessed with food. I know that you have been to other blogs before and they have probably told you the same thing, but I am a little bit different. I have dedicated 6 years of my life to studying cooking, cuisine and why we eat what we eat. The good part about my studies was that they were fascinating. The bad part was that I was broke. The worst part was that I spent all day everyday reading about delicious things, but I couldn’t afford to go out and eat them. Don’t be sad for me though, because there was a silver lining (there always is). The one good thing about being restricted in terms of finances is that you are given an opportunity to think outside the box and be really creative. If I wanted to eat what I was reading about I could, all I needed to do was figure out how to cook the dishes myself and keep them within my budget.

Nickels and Noodles was born out of my experiences enjoying real food on not a whole lot of cash.  While my roommates were eating instant noodles three times a day, I was preparing healthy, homemade food that I actually wanted to eat.

Most of the recipes that you will find here will be simple, wholesome and can be cooked and prepared with minimal fuss. You don’t need a culinary arts degree to follow my recipes, they are meant for stressed out students, busy working folks and people who just want some affordable inspiration.

It’s time to put down the box of macaroni with powdered cheese. Don’t be intimidated, we can do this together. Stop using your oven for storage and start using it to cook! Just because you are short on money does not mean you are short on options. You have it in you to create homemade, wholesome and delicious meals. So what are you waiting for?
